If you are passionate about customer service, cooking and management, a qualification in the hospitality sector may be just right for you! With three different streams to choose from (Commercial Cookery, Patisserie and Food and Beverage), you will be able to specialise in the area you want and obtain either one or numerous qualifications to take home. These courses provide blended learning to ensure you understand the theory component but also have enough training and workplace hours to put what you are learning into practice.

Commercial Cookery pathway

Certificate III in Commercial Cookery

A certificate III in Commercial Cookery will teach you how to prepare a wide range of specialties including appetisers, salads, sauces, soups, as well as meat and seafood dishes. You will learn how to use kitchen equipment correctly, plan and cost simple menus, produce desserts and handle food safely. This course will put you on track to work in commercial kitchens in restaurants, pubs, cafes, and hotels.

Units include:

  • SITHCCC001 Use food preparation equipment
  • SITHCCC015 Produce and serve food for buffets
  • SITXINV001 Receive and store stock

Certificate IV in Commercial Cookery

A certificate IV in Commercial Cookery will provide you with the skills to run your own kitchen. This course will add another layer to the things you learn in a Certificate III and enable you to be a supervisor and lead a small team. You will learn about coordination and rosters, as well as meeting and catering for specific dietary requirements.

Patisserie pathway

Certificate III in Patisserie

A certificate III in Patisserie will teach you the skills to produce cakes, pastries, yeast-based bakery products and other desserts. You will learn to do this maintaining safe and hygienic work practices as well as the quality of perishable items. Upon completion of this course you will be able to work as an assistant patissier.

Units include:

  • SITHPAT001 Produce cakes
  • SITHPAT005 Produce petits fours
  • SITHPAT006 Produce desserts

Certificate IV in Patisserie

This course will deepen your knowledge of pastry making and add on additional useful skills such as presentation, customer service experience, and first aid. Upon completion of this course you will be able to work as a patissier, baker’s assistant or pastry cook.

Units include:

  • SITHPAT010 Design and produce sweet buffet showpieces
  • SITHPAT008 Produce chocolate confectionery
  • SITHPAT009 Model sugar-based decorations

Food and Beverage pathway

Certificate III in Hospitality

A Certificate III in hospitality will teach you the skills to work in a variety of roles including food and beverage attendant, restaurant or function host and barista (espresso coffee machine operator). You will learn how to work independently within a team and employ good customer service skills.

Units include:

  • SITXWHS001 Participate in safe work practices
  • SITHFAB002 Provide responsible service of alcohol
  • SITHFAB005 Prepare and serve espresso coffee

Certificate IV Hospitality

A certificate IV in hospitality will allow you to pursue a career as a food and beverage team leader or shift manager. You will be able to plan tasks and manage team members as well as find solutions to everyday problems.

Units include:

  • SITHIND004 Work effectively in hospitality service
  • SITHFAB003 Operate a bar
  • SITHIND001 Use hygienic practices for hospitality service

Diploma of Hospitality Management

Diploma of Hospitality Management will assist you to pursue a career as a functions, restaurant or front office manager. You will learn leadership skills as well as acquire the necessary knowledge on different departments within hospitality to ensure they all run smoothly and cohesively.

Option 1 (pathway): Entry prerequisite Certificate III and IV in commercial cookery, patisserie or food and beverage

Option 2 (direct entry): Completion of high school Year 12. No need to previously complete a certificate III or IV

The stream you come from or are aiming to pursue (hospitality, patisserie or food and beverage) will determine the specific units you will complete.

Advanced Diploma of Hospitality Management

An Advanced Diploma of Hospitality Management will assist you to become a senior manager and supervise a team in any establishment within the hospitality sector.

Units include:

  • SITXHRM004 Recruit, select and induct staff
  • BSBMGT517 Manage operational plan
  • SITXCCS008 Develop and manage quality customer service practices

*If you do not have official English test results, you may be able to have your English level evaluated internally by the school free of charge.

**Depending on the institution you chose to study at, different course commencement dates will be available. TAFE only has courses commencing in February/July but there are other schools that have regular intakes throughout the year
